Gwyneth’s birthday was just over a week ago.  She’s now four years old.  She can count to 109 (after that she says it gets boring), she can write her name, add single digit numbers, button her coat, read a few books, and be a great helper.  She loves pink, dancing, coloring, her brother, princesses, and Strawberry Shortcake (who wouldn’t love a pink doll???).

For her birthday she wanted a pink Strawberry Shortcake Strawberry Cake with real strawberries. I did a quick google search and found this recipe from Paula Deen.  I’ve never made a cake with jello in it (pudding yes, but jello no).  It was interesting.  It tasted good and the kiddos ate it up.

We had a small party with her cousins — nothing lavish or outrageous, but fun.  There was cake (and cupcakes too), music, dancing, balloons, fairy wands and light sabers (yup, you read that right) and lots of laughter.

To make the cake I just used a bundt pan and stuck a brand new Strawberry Shortcake doll in the center.  I added extra icing in the center to hold her in place and pinned her hair up in an updo so it wouldn’t get in the frosting.  Her dress was coated with pink sanding sugar and an hour before the party I added fresh strawberries to the dress.
